I love an easy recipe and this pumpkin ice cream pie is just that. My friend and I were talking about how she had made this dessert over the weekend, and just how yummy it was. As she described that pumpkin ice cream that filled a graham cracker pie shell, topped with walnuts…I thought I am going to have to make that!
Off to the store, my oldest daughter and I went. She had mentioned that Publix was where she found the specific ice cream she had used, Pumpin Pie Icecream, and I highly recommend it too. I am sure just plain pumpkin ice cream is delicious too if you can’t find the other.
I found everything we needed plus an extra ingredient, cool whip! A layer of cool whip would be great tasting on it and why not add another layer. So we ended up getting the sugar free cool whip to save us some calories haha.
