Easter is such a special time as we celebrate the resurrection of our Lord Jesus. We always enjoy gathering around the table and sharing a meal together with our family.
Many think that holidays and meals are just a wash for trying to stay on the healthy track, but I’ve got great news for you in this post today. You can have delicious food and not compromise your healthy lifestyle choices even during special occassions.
I am going to be sharing five healthy Easter menu ideas that our family loves! Scroll down to check out these recipes.
5 Healthy Easter Menu Ideas
Family Recipe, Deviled Eggs
#1 Low Fat Deviled Eggs
Ingredients:
Boiled Eggs
Soda Crackers, crushed fine
Mustard
Light Mayonnaise
Salt and Pepper
Paprika
Directions:
Slice boiled eggs in half and remove yolks. Mash yolks with a fork. Add 1 crushed cracker for every 2 yolks. Add a small amount of mustard depending on the number of eggs (1 tsp for 6 eggs). Add enough mayo for spreading consistency. Season with salt, pepper, and paprika. Top with paprika!
Crunchy Coleslaw Salad
#2 Healthy Coleslaw Recipe
Ingredients:
You can use shredded cabbage (our preference) or coleslaw (2 smaller bags or 1 large one)
Ramen Noodles (1 pack)
Feta Chees
Brianna’s Real French Vinaigrette Salad (This is a MUST! Such a great dressing)
Optional: Toasted Almond Slices (bake almond slices in the oven at 350 for 5 minutes)
Directions: Toss ingredients 1-4 together, serve with dressing on the side.
Tomato cucumber feta salad
#3 Light Tomato and Cucumber Salad
Ingredients:
Cucumbers
Red Onion
Tomatoes
Any color pepper
Avocados
Feta cheese crumbles
Brianna’s French Vinaigrette Dressing
Lemon
Optional: Canned artichoke hearts
Directions:
Cut up all of your veggies except the avocados. Then cut your lemon in half and squeeze one of the halves over the veggies. Pour 1/3 bottle (or more depending on how much you are making) over the veggies, stir, cover, and chill for an hour or more. Chop up your avocados, and gently stir them into your chilled mix. Next, add in the feta chunks before serving.
Homemade Apple Pie
#4 Low Fat Apple Pie
Ingredients:
5-6 Granny Smith apples
3 Tbsp applesauce
3/4 c Brown Sugar
1/2 tsp Salt
2 tsp Cinnamon Sugar
1 tsp Corn Starch
2 Pie Shells
Egg White
Directions:
5-6 Granny Smith apples, peeled, cored, sliced about 1/4” thick
In a large frying pan, melt 3 Tbsp butter on medium heat, and add apple slices.
Stir gently, occasionally. Add about 3/4 c brown sugar and 1/2 tsp salt. Continue to occasionally stir, sprinkling in 2 tsp cinnamon sugar.
As apples cook (5-7 min), they will soften, and there will be a syrup formed. If the syrup is thin, sprinkle in 1 tsp of corn starch to thicken. Add a squeeze of lemon juice, if desired.
With a slotted spoon, place apples in the pie shell, then pour the remaining syrup over the top.
Slice a second pie shell into strips as pie lattice topping. Brush with egg wash (egg white with a little water). Sprinkle with decorative white sugar. Bake at 350 degrees 20-30 min to brown crust.
*You can omit lemon juice for personal preference.Serve with light vanilla ice cream and fat-free cool whip.
#5 Healthy Applesauce Muffins
Ingredients:
1 cup sugar
1 cup applesauce
1/3 cup vegetable oil
2 eggs
3 Tbsp milk
2 cups sifted all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp salt
1/4 tsp ground nutmeg
3/4 cup chopped pecans, (optional)
Topping:
1/2 cup brown sugar
1 tsp ground cinnamon
Directions:
Preheat oven to 375 degrees.
In a mixer, slightly beat eggs. Add both sugars, oil, milk, and applesauce and mix well. In a separate bowl, stir together dry ingredients and add to the applesauce mixture. Beat until well blended. Stir in pecans (optional).
Spoon into lined tins. For the topping, stir together brown sugar and cinnamon. Sprinkle evenly over the tops of muffins. Bake 12-15 minutes.
