I love fresh salads like this, especially during the hot summer months! Not too long ago, my mom brought us this tomato cucumber and feta salad, and I immediately had to get the recipe. While it’s true that it’s a super simple recipe, there is a critical ingredient that pulls it all together: the dressing.
Cucumbers
Red Onion
Tomatoes
Any color pepper
Avocados
Feta cheese crumbles
Brianna’s French Vinaigrette Dressing (this is the secret!)
Lemon
Optional: Canned artichoke hearts
Cut up all of your veggies except the avocados. Then cut your lemon in half and squeeze one of the halves over the veggies. Pour 1/3 bottle (or more depending on how much you are making) over the veggies, stir, cover, and chill for an hour or more.
Chop up your avocados, and gently stir them into your chilled mix. Next, add in the feta chunks before serving. Enjoy!
