These delicious cookies are so fun anytime of the year, but especially around the holidays. These cream pies are a nostalgic treat and hold their own for the perfect dessert at any Christmas party. The delicious marshmallow cream surrounded by oatmeal cookies is truly delightful!

Oatmeal Whoopie Pies

A few nights ago my husband and I attended a Christmas party for his work. A good friend of mine had brought these oatmeal whoopie pies for dessert. The minute I tasted them, I knew I had to have the recipe haha! She had originally found the recipe here on The Pioneer Woman’s website. They were a hit, none were left by the end of the party!

Now, before we go any farther, I want to say that there are two options The Pioneer Woman gives in her recipe to use for the icing in the middle. The first one is the marshmallow cream out of the jar which is what I used for ease and time efficient. The second one is for homemade icing which is what my friend made hers with (you can find that here). While both are delicious, my favorite was the homemade icing option. If you do use the marshmallow cream (again a yummy and quick option), do not put it on the cookies until they are cool!! Otherwise, they will slide off the melting cream once it hits any kind of heat.

Ingredients:

2 cups Brown Sugar
1/2 cup Butter, Softened
1/4 cup Shortening (Crisco)
2 whole Eggs
1/2 teaspoon Salt
1 teaspoon Ground Cinnamon
1 teaspoon Baking Powder
3 Tablespoons Boiling Water
1 teaspoon Baking Soda
2-1/2 cups Flour
2 cups Quick Oats

1 Can Marshmallow Cream (frosting)

Instructions per The Pioneer Woman recipe:

Preheat oven to 350 degrees.

Cream brown sugar, butter, and shortening. Add eggs and mix. Add salt, cinnamon, and baking powder and mix. Mix baking soda and boiling water, then add to the bowl and mix. Add flour and oatmeal and mix well.

Scoop dough onto parchment-lined cookie sheets so that you have rounded heaping teaspoons. Bake for 10 minutes, being careful not to burn. Remove from oven, transfer to a cooling rack, and don’t forget to let the cookies cool completely.

Once the cookies have cooled, you will take a spoonful of the cream (or frosting found here), and spread it on the bottom of one cookie. Then, top with another cookie.

For best results, place them immediately into the freezer to harden. If you are actively serving your guests while making them, they will need to be eaten at that time and not set aside. Trust me on this, haha, I learned this lesson the sticky way!
